The best vegetarian healthy burger

Was craving burger, did not want to eat meat and bread . BIG DILEMMA!

But I came up with this yummi #vegetarian burger with salad and some baked "fries" at the side.

And you know what? If you leave out the cheese and egg in the patty it's even #vegan..

Satisfied every burger craving :)

Veggies all over

Ingredients for the patty:

  • 60g minced tofu
  • 50g chopped kidneybeans
  • 7g blended cashews
  • 1 mushroom
  • Some fine chopped onions
  • 1-2 eggwhites (depends on the size)
    • Tip: for a vegan version skip it or use egg-replacer
  • 2 Tablespoon almond flour
  • 1 teaspoon oats
  • Some mustard, sweet paprika powder, salt and pepper to taste

Other Ingredients:

  • 1 big Portobello mushroom
  • 1 potato
  • Little bit of olive oil
  • Everything you like to add to your burger, like
    • Ketchup, mayonnaise and some more mustard.
      • Tip: Take care to chose the right ketchup because most of the store-bought ones are packed with sugar.
    • Cheese
    •  Salad
    • Cucumber
    • Tomato
    • Onion..

Instructions:

  1. Blend the patty ingredients in a high-power food processor until you have a ground but not mashed consistency
  2. Form a patty and set aside
  3. Cut the potato into fries or wedge shape, place on a baking sheet.
  4. Sprinkle with some olive oil, salt and pepper
  5. Bake for about 25 minutes on 180 degree until golden and crispy
  6. In the meantime prepare all the other burger add-ons. Start with cutting the big Portobello mushroom into 2 halfs, like a burger bread. Then cut your other ingredients as desired.
  7. Fry your burger bun and add to the prepared Burger
  8. Serve with your yummi, low fat fries
