Crispy sweet potato pizza crust {Healthy alternative, vegan}

It’s not a secret that I have a personal love affair with sweet potatoes. This time I combined them with some healthy whole grain flour and created a crispy pizza crust with a healthy twist.

No more explanation needed, here comes the recipe which serves 2 portions


Ingredients:

  • 70g oat flour (blended oats)
  • 500g peeled and pre-cooked sweet potato (I always use the microwave)
  • 100g whole grain spelt flour
  • 80g non flavor protein powder
  • 20g Seitan
  • 20g yeast
  • Salt, pepper and nutmeg to taste
  • Tomato sauce and your fav pizza toppings of choice
  • Additional: Some more whole grain flour mixed with protein powder to flour the surface

Instructions:

1. Mix all the ingredients in a high-speed blender until you have a thick and sticky dough

2. Transfer mixture into a bowl, cover with a clean kitchen towel. Let sit for about 45minutes at a warm place.

3. Preheat the oven to 240 degree.

4. Lightly flour a surface with the protein powder/flour mix and use your hands to knead the dough. Knead in as much of flour mix as needed until the dough isn’t that sticky anymore

5. Divide into two equal pieces

6. Line baking sheet with parchment paper and spread the dough evenly into pizza shape. Tipp: If it’s to difficult to spread it out, use another baking sheet, place dough in between and use a rolling pin

 7. Drizzle some olive oil on top and pre-bake for around 20minutes. The crust should be pretty crispy already

 8. Add tomato sauce, cheese and your favorite toppings

 9.Place again in the oven and bake until cheese is melted.

 10. Enjoy :)

 

 

Staying hydrated in the Shanghai Heat- The Pink Drink {Part 1}

30 degree upwards, humidity, sun and sweat – a typical mix of summer in Shanghai.

Especially during this season it’s super important to stay hydrated. Our bodies consist of about 75 percent water and during this heat, we have to take care that it stays like that. So we need to replenish all the water we lose every day through sweat et cetera.  If we don’t replace it, out blood thickens which causes harder work for our hearts to pump blood through our bodies, which can raise the risk of a heart attack.

Furthermore staying hydrated controlls our appetite. That’s why it often happens that people who think they feel hungry are not actually hungry, they are thirsty caused by dehydration.

But well, „staying hydrated“ sounds easier than it actually it, because carrying around a 3l water bottle all the time, to have a sip here and there, isn’t really handy. And apart from that a bit taste would be great aswell.

So I created this Drink recipe which doesn’t only taste great and helps you staying hydrated but also provides additional health benefits to keep you cool during this summer heat (More about that later on). Not to mention that it’s super healthy, natural aaaaand low calorie. Sounds like a pretty great combination, right?


Pretty in Pink  - Coconut Water, Aloe Vera and Guava Juice Drink

Ingredients:

  • 250ml cold Water
  • 200g Aloe Vera
  • 1 large coconut
  • 1 pink Guava
  • Ice cubes

This is actually the perfect combination of summer health benefits.

Because the coconut water isn’t only rich in nutrients, it furthermore contains more electrolytes than an average sport drink. And especially when you sweat a lot due to heat or physical activity, you tend to sweat out those electrolytes, that’s why sweat tastes a bit salty. So we can give some of those important electrolytes back in a natural way.

Aloe Vera has been used for medical purpose since centuries, so it’s not a big suprise that Aloe Vera is super nutritious aswell. Aloe Vera can even helo you to lower your blood sugar. Apart from that you can use leftovers as a cure against sunburn because applied to the skin it has an amazing and natural cooling affect.

Guava is a high energy fruit which is a real powerhouse of vitamins and minerals. Additional it contains a lot of dietary fiber. Therefore it’s considered as one oft he most healthiest fruits.

I teamed up with Field's, the online grocery shop in Shanghai, for this recipe. Because Guava and Aloe Vera are quite hard to get in Shanghai. Furthermore they have a so called "Coco Easy Coconut" which has an integrated opener, Cool huh :)?

Instructions:

1.     First we need to prepare the Aloe Vera leaf by cutting off the lower edge. Now you will see the colorless jelly like gel inside. Squeeze out the entire gel from the leaf into a bowl. Voila, you made Aloe Vera gel.

2.     Open the coconut and fill the coconut water into your aloe vera gel bowl.

3.     Use a spoon to take out the coconut flesh

4.     Cut the guava into cubes

5.     Add all the ingredients to a high power blender and mix until combined without any pieces left

6.     Enjoy :)

The only thing you need to do is cooking and you will get a healthy, fresh made lunch or dinner. And do you know what’s the best part about it? You know exactly whats inside your food.

So I was pretty happy that Xinwei Cook sent me 2 dishes and I had the opportunity to try it:

Teriyaki Salmon and Mixed Vegetables and Sauteed Prawn with Pitaya and Macadamia

And that’s how the kits look like, including everything you need:

First I tried the salmon with mixed veggies. The preparation was super easy with the step by step instruction and I received a really delicious dinner after not even 10 minutes in the kitchen. That’s exactly how I like it after a long day :).

The only thing I didn’t like was the pre-measured amount of olive oil, which I was supposed to use. I already saw, while cooking, that it would be way too much oil, so I just used half of it and it was more than enough. But maybe that’s just a personal preference since I am not really into too oily and fatty stuff. So therefore I wouldn’t really see it as a negative point because it’s not a big issue to just use less then in the kit included.

Apart from that, I was really surprised by the all over quality, thumbs up.

For the sauteed prawn with pitaya and macadamia it was unfortunately a little bit different. I really loved the dish and creativity of the composition because I never had fried pitaya with seafood at the side before.

The combination is actually really flavorfull and goes well together (will definetly try that in other combinations aswell). But to be honest, I didn’t cook after the instruction here at all. I think the instruction makes things a little bit more complicated than they have to be and keeping it simple and easy is the actual idea behind the concept, or am I wrong? So I didn’t slid the shrimp (they were actually not that big, so even cleaning the gut wasn’t necessary), I didn’t boil the shrimp and veggies before frying and also left out the delivered cornstach. For me there doesn’t need to be any kind of starch-mix added.

But besides the fact, that I didn’t stick to the instruction, the amount of each ingredient were right on spot, quality was awesome aswell and I had a really yummy dinner. Recommended? Yes.

 

The portion sizes for both dishes were actually pretty big for 1 person, but not for me (haha) I ate it all by myself. So the only thing I felt a bit guilty about wasn’t that I ate it all, it was more about all the plastic and paper waste I had produced with a single meal. Not really positve for your ecological footprint but due to the fact that the entire concept is about pre-measured and portioned food I don’t really have a solution for this problem. If anybody has a creative idea how to solve that „problem“, please let me know and I will forward it to the guys from Xinwei Xook :). 

By the way, the prices vary from dish to dish but start at 28 rmb, up to 58 rmb.

To sum it up: Great concept, which gives even the most untalented cook the ability to cook a healthy and delicious dinner at home. And all that comes for super reasonable prize and with amazing quality.

Might also be a good way to impress your next date, but that’s none of my business ;).

Super Salad – Healthy salads delivered to your doorstep with 10% discount

I bet most of you have been in one of the following situations before:

  • You had a really long day at work but still wanted to go to the gym to kick some ass.  Afterwards you feel amazing, fit and healthy but also really really tired AND hungry. So buying groceries and flipping pans and pots around, doesn’t sound really appealing to most people in that situation

The mentioned situations have one thing in common: If you want to get food without cooking, you either buy some take-away or get it delivered. And I guess one thing comes to your mind immediately, when you hear "delivery": SHERPA’S. Yep, okay, your point because delivery in shanghai just screams for Sherpa’s.

But if you want to order a big fresh salad, the (awesome) options are even limited on Sherpa’s. Except you are willing to pay up to 140 rmb for a simple salad with some tiny shrimps, a bit chicken or what ever on top (sorry, element fresh). Especially because portion sizes for most of the delivered salads are super tiny, but they still charge the same amount as eating in the restaurant, where you literally get double the size.

So regarding all that bad „shanghai-salad-experience“, I was super happy that I have stumbled across Super Salad the other day at Becycle Spinning Studio after spinning class. They had  Super Salad flyers there and obviously I had to take one with me.

Wondering why I was so curious about a salad flyer? The pictures at the flyer were almost too good to be true for the price range (34-42 rmb !!!!).

So a few days later we ordered 4 salads to try and to be honest, I didn’t expect much.

I mean where in this city can you find a decent smoked salmon salad with avocado for 42 rmb? I don’t know a single place, even Wagas is more expensive. (If you know any, let me know ;))


40 minutes later, our salads arrived and I was really really reaaallllllyyy surprised. Each salad came with a dressing at the side, a fork and knife with napkin and a piece of multi grain bread. All packed in environmental friendly, brown bags and containers.

I was so excited, that I immediately opened all salads to take a look at them and take some pics. (Guess it’s time to say thank you to all my friends, who are always super patient with all my picture taking and not letting them touch their own food haha)

And seriously, I am not exaggerating, I almost freaked out while taking the pics because I just couldn’t believe how great the value for money was. And before you start asking: YES, it ist hat easy..give me a good salad and I am happy .

Another thing I really liked besides the decent size, were the nutrition facts on each salad’s label. That makes it super easy to check for calories, fat, carbs and most important: protein.

Haven’t seen anything similar here in Shanghai and I really appreciate that.

 

Besides amazig salads they also offer sandwiches and fruit juices. Haven’t tried the sandwiches because they are made with Ciabatta but the Vegetable Cleanse Juice was really good. By the way, they just use high quality ingredients and 100% home made sauces.

La Bota – A small piece of Spain in the middle of Shanghai

La Bota is a Spanish wine and tapas bar located on Dagu Lu, downtown Shanghai.


If you are looking for a wide variety of traditional Spanish tapas and pinxtos for a reasonable price (Tortilla, gambas al ajillo, croquetas, squid with aioli, cold cut platters with Spanish Manchego cheese and ham…just to mention a few), La Bota is definitely THE place to go. Apart from their really great menu, they also have a really really awesome terrace for outside seating. Especially during a mild summer evening it feels like a small get-away to Europe.

Oh wait, I forgot about the outstanding white sangria and the lovely Spanish owner, who really makes the La Bota vibe (how I call it). So 1-3 of my beloved white Sangrias with apple and banana paired with the La Bota vibe and you definitely forget that you are in China and not somewhere in Spain.

It’s really one of my favorite places in the entire city and my go-to spot for working in the sun during lunch time or just having drinks and dinner with friends. And you know what? If you choose the right items from the menu (nope, deep fried truffle and wild mushroom croquetas are unfortunately not included :( ), it’s even super healthy because they offer a pretty decent selection veggie-tapas, salads and fresh seafood  for an excellent light meal option.
