Edamame, cashew and dried tomato pesto

Pesto is always an easy, healthy and fast option for a yummy side or main dish. It's so diversified that I always keep some in my fridge. Furthermore it lasts a few weeks if you use enough oil to cover the entire surface and make sure that you don't have any bubbles in it (does not really matter for me, because it never lasts that long ;)). 

Ingredients for 1 big glass:

  • 100g Parmesan cheese 
  • 150g Edamame
  • 70g Cashews
  • 50g dried tomatos
  • 50ml Olive oil
  • salt and pepper
  • 1 clove of garlic


  1. Add all the ingredients to a high-power food processor and blend until it has the right consistancy. Add more oil if desired, I prefer not too oily pestos, that’s why my pestos are always a little bit crumbly. But take care not to mash it
  2. Fill into a glass and done :)
