Being on a low carb or pale diet can sometimes be real struggle. Especially when it comes to dishes which are traditionally served with rice (for example thai-curry) or where the main ingredient is plain rice (fried rice haha). Ofcourse you can just leave out the rice entirely as a side but how to eat all the amazing sauce then? And isn't that the best part, soaking in all of the remaining sauce with the grainy yumminess? If I would would like to eat sauce with a spoon, I order soup ;)..But coming back to the topic, low carb or paleo means NO RICE AT ALL!!! Because rice is not paleo friendly due to the fact that it belongs to the group of grains, which makes it not low carb friendly either. However, I already see the sad faces of all the sushi-lovers, curry-lovers, Chinese-food-Lover…out there. But hey, you do not have to be sad. There is an easy peasy substitution available in every supermarket: Cauliflower.
Cauliflower = rice? Well, if you think about the unprocessed white cauliflower head, it definitely has no relation at all to rice, I agree. But we can simply change that fact by using a blender as you can see in the following recipe instructions.
- Cut the cauliflower into pieces and blend them in kitchen machine until you receive "rice-size". But take care not to blend it too long because otherwise you will receive cauliflower mash.
- Put the cauliflower-rice into a big bowl and microwave for about 5 minutes on medium heat
- Now you have a perfect rice substitute which you can process and season as you would do with normal rice. See som examples here:
